The Arab conquest started only after the death of mohamad. And not during his time.
That was when captured soldiers were given a choice of either to convert or executed.
The Arabs fought a two front war against the two superpowers of the time although both were at their weakest. The orthodox Eastern roman empire based in constantinople( it's not really a Turkish city but was built by romans) and Persians.
Plus Arab tribes in arabian peninsular were subdued and forced to contribute to the army. Among them were jews who lived among the arabs.
