Hence per day need to sell 150 plates
This is achievable.

But this is the revenue not the profit.
He has 100 employees.
If each employee salary =$2k x 100 = $200k

If each stall rental = $5k x26 = $130k

Ingredients per day say 30% of per plate $5 = $1.50 x 150 = $225 per day = $7k per mth x 26 = $182k

So his actual profit per mth is about

$580k (sales) - $130k (rental) - $200k (salary) - $182k (ingredients) = $68k

Maybe lesser abit if salary is higher than $2k per pax

I personally know 1 malay who hold a full time job while moonlighting with 2 own businesses.
He hire some staffs but his staff (also malay) always play punk mc etc so he always need to take mc to cover.
Then due to too tired, he always grumble about the business orders when it comes to him. Then he sleeps on his full time job.
Super lazy fella not only to his Ft work but also his own business. End up he was terminated from his full time job.
Although he is very lazy, his business idea was good and business keeps coming in.
