Besides curry laksa, Penang asam laksa is another variant of the dish that’s commonly found on our shores. It doesn’t contain a rich, coconut-cream soup base, and instead uses a tangy and spicy fish broth that’s packed with flavours of lemongrass, galangal and chilli. One will usually find a medley of fresh condiments like sliced cucumbers, onions, mint, pineapples, and sweet prawn paste nestled gently on top the bowl, giving the dish contrasting flavours and textures with every bite.

You’ll be able to find Penang laksa in many different establishments like D’Laska and Gurney Drive Signatures, but we’re recommending the one at Penang Kitchen for its well-balanced and consistent flavours.

Sarawak laksa is not as easily found in Singapore, but it did become a little more popular after celebrity chef Anthony Bourdain coined it ‘Breakfast of the Gods’ in 2015 on Instagram. The dish is characterised by its subtle, mild flavour: its broth is made with a combination of sambal belacan, coconut milk, tamarind, garlic, galangal, and lemongrass. Besides rice vermicelli noodles, it is then topped with peeled boiled prawns and chopped coriander leaves. Laksa is usually associated with a blissfully delicious broth, but dry laksas have been making their rounds in the bellies of locals here. It is usually based off recipes from the curry laksa, but the thick vermicelli noodles are then stir-fried directly with the laksa paste. You’d be able to find dry laksa options at establishments like Violet Oon, but we’re spotlighting one you can have in the comfort of your home: Jelebu Dry Laksa.

Founder and owner of Jelebu Dry Laksa, Renee Tang Eyrn, adds a fancy twist to the traditional dish by using upmarket ingredients like lobster, grilled tiger prawns and sakura ebi to the mix. There is a minimum order of S$12 for delivery, and delivery is free for orders above S$60.

When most people think of Chomp Chomp Food Centre, they think of the humongous sugar cane drinks. But when I think of Chomp Chomp Food Centre, I immediately think of Ah Hock Fried Hokkien Noodles! It is by far my personal favorite, and I can’t deny that I might be a little bias. You often have to wait at least 30 minutes. If that doesn’t prove how good Ah Hock Fried Hokkien Noodles is, I don’t know what will. I personally prefer to dabao it, so that the noodles can absorb all the saucy goodness!

Not only is Sheng Seng Fried Prawn Noodles extremely delicious, but it is also value-for-money! It is served with generous amounts of noodles and seafood! Sheng Seng Fried Prawn Noodles stands out as they tend to serve a wetter version as compared to other stalls out there. Their homemade chili sauce also leans slightly towards the sweeter side, giving the dish a great balance between flavors!

Hong Heng Fried Sotong Prawn Mee is featured in the Michelin Guide. Having received the Michelin Bib Gourmand yearly, the Hokkien Mee served at Hong Heng Fried Sotong Prawn Mee is definitely of a certain standard. Even till now, the 3rd generation owner still cooks the Hokkien Mee traditionally in a wok and is only cooked to order in small batches!

The 73-year-old owner, Uncle Soon has been preparing and cooking for Hokkien Mee for years with the help of his wife. With no one taking over, you need to try the Hokkien Mee ASAP! Unfortunately, we never know when they will decide to cease operations.

Also located at ABC Brickworks Food Centre, lies Tiong Bahru Yi Sheng Fried Prawn Mee! It is extremely easy to find this famous Hokkien Mee stall with its snaking queue. What makes Tiong Bahru Yi Sheng Fried Prawn Mee so different from others, is the strong smoking flavor that each plate of Hokkien Mee has. Besides that, the sambal chili contains Ikan Bilis which is something different!

Kim’s Famous Fried Hokkien Prawn Mee is perfect for seafood lovers! Served with fresh and huge sea prawns and thick-cut sotongs, the portion itself already makes it very worth it. According to the owner, Kim’s Hokkien Mee is pre-fried and left to rest and refried when you order your plate so that the noodles taste better. The pork lard bits are a great addition to the overall dish!

If you’re looking for some old school Hokkien Mee, Kim Keat Hokkien Mee should be on the top of your list. Here, you have the option of enjoying it in the Opeh leaf style or Claypot style. But the Claypot style is highly recommended! In addition to that, they serve their Hokkien Mee with deep-fried roasted pork belly. Something you don’t see very often elsewhere.
