If you drink it on the rocks, aren't you adding tap water to your premium drink? Straight up in cold weather is the way to go but not everyone likes the strong taste.

Exactly, some don't like or can't take the strong taste, that's why some have it on the rocks. Some like it cold too. That's the max to go in softening or chilling the drink. Never add water directly as if making a drink out of syrup. I've seen my Chinese friends do that in pubs and KTVs, not on XO though, just VSOP brandy. That's also destroying the taste of brandy, even just VSOP. VSOP with soda is alright though, if that's the taste preferred, but using XO is such a waste.
 
I tried one very good Chinese dish with XO before many years ago, courtesy of my Chinese classmate's invitation to his grandmother's birthday party. Can't remember the name of the dish, sip-sip something. It was duck boiled soft in herbal broth served with very thin white noodle that looks like beehoon but I'm sure it's not beehoon.

That's why I said mix it with wine. If you don't like it because the taste is too strong, then consider using wine as a mixer. It is a lot better than using things like soda, ice (pple pour on rocks n wait for the ice to melt soften it) or worse 7-Up. If you use wine as a mixer, the resultant mix is port. If you use XO with a cheap wine, the result can often compare with a $100 bottle of port. Use a low grade VSOP and you get results close to a $40 port.

Another best recipe is Fried Rice with crab meat and egg white only with dashes of XO ..... Old Man oso kowtow ..... no horse run .....:eek::)

What about the all time wedding dinner classic of thick sharks fin soup with XO and a dash of vinegar.

Medium steak with a dash of red wine is paradise and with a dash of XO is heaven. Cordon Bleu chicken is one of the best dishes the Frogs have ever invented, their equivalent to Chinese drunken prawns. Talking about frogs, the Chinese claypot frog with a dash of XO is also very good.
 
Occasionally I drink sake, usually the lower-end Geikeikan or equilavent at about S$20+ per 750 m.l. pack. Best drank after warming. Don't boil the sake direct. Warm it in a small porcelain wine flask that's put into bigger bowl or mug of hot water for a few minutes, without the water overflowing into the cup of course. Just as one would do with warming up small bottles of chicken essence.

I didn't even really know her name in the first place, but from my friend's surname Ng, I greeted her Mrs. Ng. She didn't speak much English anyway and neither could I manage much Chinese.
