This is interesting, khai katak literally pan egg. Was surprised to find it here because this is a very popular food in Udonthani in North East of Thailand known as Isaan. Was told that Vietnamese immigrants brought this over to Thailand and yes Udonthani is a province that many Vietnamese Chinese fled to.
Khai katak basically consist of sunny side up with minced pork, sausage ham, lupcheong
After its done
then served on an aluminium pan like this, it is served with a bread roll sandwich stuffed with the same sausage ham, lupcheong and minced pork
