Actually this kind of food does not excite the malays. The malays like those greasy BBQ lots of meat no veggie type of food but only within a certain price range.
Ikan Baker you may attract malay crowd due to sambal and Ayer Assam. It must be fresh fish and not overcooked like some places. Nice moist meat. And. Not spluttered with those nasi lemak type sambal with the fish. It's got to. Be the sambal belachan. Various types or sambal. Machang.
Malay cuisine nowadays neglect the sambal. They make all kinds of nonsense food malays eat only occasionally like during Raya and neglect the basic food like Ikan bakar ikan goreng with sumptuous sambal or Ayer Assam with white rice and ulam.
This food will attract other races too.
I suggest the lady ditch the mookata and serve basic malay food.
 
No such thing as 100% halal restaurants…if liddat say then non muslims not allowed to even eat there because the infidels contaminate their utensils merely by eating with it.
exactly. infidels should be banned from eating halal food, must not take taxi, plane, etc, must not receive $$ from infidels since it's haram to share facilities with infidels as it's contaminated. bottomline is they pick and choose what is acceptable and what is not to suit their own circumstances. no thinking at all, just blindly follow rituals. i'm heartened to see more and more enlightened muslims though but its few and far between.

You are on a halal heritage island. Don't force malays to turn it into a reality.

i agree that most ikan bakar are overcooked, heavily deep fried. i suspect the fish is not so fresh to begin with. fish should be fresh and lightly fried to retain it's flavor. indos love to top it with a ton of sweet sauce. overly deep fried + overly sweet is perfect recipe for a super unhealthy dish

You cannot find this simple home cooked dish anymore. Just fried or BBQ ikan kembong. With delectable sambal belachan or air Assam. Simple and priceless and cheap to make. Forget mookata.

Agree that you can't go wrong with ikan bakar (I recently had the good fortune of trying the delectable Ana Ikan Bakar Petai in Kuantan), but I guess the owner was thinking of introducing a new genre of cooking to the Malays instead of competing in a very crowded segment of traditional Malay cooking.

Singapore is one of the most, if not most cosmopolitan cities in the world when it comes to the culinary diversity available here. No other Asian countries come close, maybe only Malaysia. But this diversity is largely lost on the Muslim population, partly because many cuisines are not halal (e.g. Japanese, European), and partly because Malays are not adventurous enough in trying other types of food. Just so, the recent proliferation of halal cai png is a move in the right direction, I feel.

A mookata dining experience almost always involves grilled pork accompanied with alcohol.

Having it otherwise might even be seen as a paradox to some.

But for Jackeline Goh, that's the idea she's been trying to sell to sceptics since opening Chickata in 2016.

The restaurant applied for halal certification in 2017 before being rebranded to Chice in December 2020.

In a TikTok video shared last Saturday (Jan 13), the co-owner explained that running a halal-certified food establishment may not always correlate to welcoming a large number of Muslim customers.



"We are non-Muslims so people might not have confidence in us," the 39-year-old said.

This was especially true when Chice was in the midst of applying for halal certification back in 2017.

Transitioning from a non-halal to a halal food joint was a challenge as sales dipped to "almost zero every day", Jackeline admitted.

Not only was attracting customers an issue, hiring Muslim staff was a struggle as some might not feel comfortable with working at a place that has yet to receive their halal certificate.

Once the restaurant has received it, Jackeline needed to convince a different group of people to give Chice a chance.
Mookata literally translates to "skillet pork" where diners cook raw meat on a tabletop grill lathered with pork fat.
Here lies a problem for Jackeline.
"Chinese (non-Muslims) also don't want to eat because no pork," she lamented.
In fact, Jackeline mentioned how "a lot" of her friends have yet to drop by for a taste of her food.
In addition, alcohol is also prohibited at the restaurant.

Hence, some non-Muslims may simply choose to avoid Chice altogether.

While Jackeline shared the more unfavourable aspects of running a halal mookata, Chice seemed to have found its footing among those who gave it a chance.

At the time of writing, the restaurant scored a 4.4 rating out of 5 on Google from over 200 reviewers.

What is halal?​

Halal translates to lawful or allowable in Arabic and according to Islamic worldview, any food or drink which falls under this category is permitted for consumption.
A common misconception is that halal simply means "no pork, no lard".
But non-halal ingredients must also be taken into consideration such as dressings containing alcohol.
