Actually this kind of food does not excite the malays. The malays like those greasy BBQ lots of meat no veggie type of food but only within a certain price range.
Ikan Baker you may attract malay crowd due to sambal and Ayer Assam. It must be fresh fish and not overcooked like some places. Nice moist meat. And. Not spluttered with those nasi lemak type sambal with the fish. It's got to. Be the sambal belachan. Various types or sambal. Machang.
Malay cuisine nowadays neglect the sambal. They make all kinds of nonsense food malays eat only occasionally like during Raya and neglect the basic food like Ikan bakar ikan goreng with sumptuous sambal or Ayer Assam with white rice and ulam.
This food will attract other races too.
I suggest the lady ditch the mookata and serve basic malay food.
