worst atrocity is chendol. used to enjoy chendol in a sundae glass, with red beans followed by green jelly at the bottom, and stacked with gulam followed by ice, then topped with coconut juice. nowadays in sg, i don't call it chendol anymore. it's more like ice kacang trifle trying to be chendol, with all colors of ingredients fighting for air. the durian topping turns it into phlegmy ice soup. adding insult to injury, tiong bu's serve them in a bowl, in the wrong sequence. in fact no sequence and layers at all. it's a fecking jumbled mess. :rolleyes:

i cooked my own mee siam with hum at home, and it was good. saltiness of hum went very well with sweet sourness of mee siam gravy. whoever invented mee siam with hum is a fecking genius! :D
 
Good article, can't fault his logic of it. I've felt the same since going overseas as well. The transition takes time but its for the better. Singapore maybe an "education" hub 10-20 years ago, but I doubt its so now.

As a Singaporean, can't say what he has wrote is not true. Only perhaps on the hawker food part, majority of these stalls are now manned by his countrymen that why the authenticity and originality of the taste of some of our famous hawkers fare are diluted.

Not a chendol person, but when I was a kid, my dad would definitely stop by the stall inside Change Alley whenever he was in town for this. Its no longer there, and chendol in Singapore nowadays is watered down. You'd have to go to Malacca for a decent one.
