A stall assistant from a fish head steamboat stall in Bukit Panjang was captured on video descaling and cutting fish on the floor, prompting the owner to apologise for his worker’s conduct.

The 51-second-long video shows a man in a yellow uniform squatting on the floor as he sliced up pieces of fish with a small knife.

Scales and pieces of meat littered the floor.

An enraged netizen commented:

“He cuts the fish on the floor, and then sells it to customers.”

Shin Min Daily News contacted the netizen who took the video, and he told reporters that he had done so as he felt that it was a breach of hygiene regulations.

He said:

"The surroundings were so dirty.

“Just watching it made me feel disgusted.”

Reporters visited the stall later and found that area where the worker had handled the fish was located at the back of the shop.

There were various bottles of condiments displayed, as well as a bucket full of unwashed dishes just outside the stall --- beside a rubbish collection point.

A spokesman for the shop, Mr Liu, 43, said that he was aware of the video and a regular patron had alerted him to it.

Mr Liu expressed his sincere apology:

“It was a momentary lapse of judgement on the young worker’s part.

“I wish to apologise to all customers for his behaviour.”

He added that the shop has always taken food hygiene very seriously, and food handlers are required to wash all ingredients thoroughly.

鱼头炉员工在地板上切鱼,全程被拍下,视频上网后引发热议。鱼头炉老板道歉,并给予员工警告。

一名叫尼萨的网民近日将一段视频上传至面簿,显示一名男子在地上去鱼鳞、切鱼肉,还调侃地表示说:“这么做肯定会让鱼更美味。”

全长51秒的视频显示,一名身穿黄色制服的男子蹲在地上,并用小刀切鱼。据观察,地上布满了鱼鳞、鱼肉碎片等,另一旁则是鱼肉,附近还打开了一个排水口。

网民在视频中旁述说:“他在地板上切鱼,然后卖给顾客。”

记者联络上该名网民,他透露说,事情发生在武吉班让一带的佳旺鱼头炉店。他表示,在家中看见这一幕,觉得违反了卫生标准,决定拍下视频。

“现场的环境肮脏,看了让人觉得恶心。”

记者走访时发现员工切鱼的地点在店铺后方。
根据线索,记者走访佳旺鱼头炉店,发现员工切鱼的地点位于店铺后方,摆放着各种餐具和酱油,店外则放着一桶桶未洗的碗碟,旁边则是垃圾收集处。

佳旺鱼头炉店的负责人刘先生(43岁)表示,一名熟客通知他有关视频在网上被传,他才得知此事。“这是年轻员工一时疏忽,我希望对此向顾客道歉。”

他也表示,店里一向注重食物卫生,将向涉事的员工重申清洗食物的规定。

It was a good move for the PAP's bottom line because they were able to charge the Hawkers rent. Rent which keeps on increasing until today the high cost is due to the excessive rentals.
 
An old ns kaki operate an economical rice( zhap cai png) stall in a kopitiam. Told me he and his family never ate anything from his own stall.

All I'm doing is relating the facts eg one of the best roast duck stalls in Singapore was located at Keong Saik Street. The ducks were strung up all over the place including the toilet cubicles located in the back yard.

Any customer who used the filthy toilets would have been fully aware of the squalid food preparation and storage but it didn't stop anyone from patronising the place. At peak hours it was a 10 to 15 minute wait for a table.

Waiting 10-15 minutes for a table doesn't seem like much of a wait. Maybe the customers were disgusted by the ducks hanging near the toilets.
 
It's the culture and environment of individual countries. Singapore is known for its cleanliness and hygiene so this is unacceptable. Imagine someone filming this across the border and nobody bothers.
