No real need to bring down an aircraft carrier. Just engage its defensive cover until it runs out of fuel and ammunition and it is as good as defeated. Not a problem for the Chinese to build things in huge volumes.
a lot of good info has been offered here, and you're not reading. a cvn has two nuclear reactors, and the nuclear fuel lasts 25 years. after one change of spent rods in 25 years, a cvn can operate for another 25 years without refueling. total operational time is 50 years. if a cvn is well stocked with food for crew, jet fuel and munitions for aircraft, it can operate as an offensive force for 6 months to a year without docking. it is most lethal and effective when moving in the vast expanse of the ocean. when a cvn goes 80% drone aircraft, it can operate without docking longer than the usual 6 months, perhaps over a year, for the sake of human morale, crew change and waste disposal. a nuclear powered ship is limited by its weakest component, the human. remove as many humans out of its dependencies, and it can operate out at sea indefinitely within the cycle of its fuel rods.
