Kaya can be green or brown, depending on the type of kaya and how it's made:
Nyonya kaya
A lighter green color that gets its hue from pandan leaves. Pandan leaves can be blended into a juice to tint the kaya, or knotted to add their aroma.
Hainanese kaya
A darker brown color that's made with caramelized sugar. Hainanese kaya is often sweetened with honey.
Traditional kaya
Some say that traditional kaya is yellow and colored only by the egg yolks. However, many recipes include pandan extract.
