I don't think single engine aircraft are allowed to fly over large expases of water . Even multi engined aircraft have to be certified for Extended Diversion Time Operations . So look into this carefully.


However, I need to do further research as there are legislated restrictions on single engined planes flying across large expanses of water.

Commercial regulations are a lot stricter. If you're flying yourself on a PPL there's a lot more leeway.
 
Gone solo already? Be careful of line squalls around Indonesia if you plan on flying around those parts eventually.

Yep, looks like another missing aircraft but this time it's an Airasia plane. An A320. It's a bigger plane & has 2 engines.
