introduced to quinoa 2 weeks ago, and the verdict is: like it. it's a seed, not a true cereal or grain. rice is a 3-in-1 seed-cereal-grain while couscous, like pasta, is made from semolina which is wheat-based. the latin words "semola" (bran) and "simila" (flour) can be traced to greek "semidalis" which can be traced to the arabic or semitic word "samid" and finally to sanskrit, "samita". quinoa is produced mostly in high altitudes in andean countries: ecuador, bolivia, columbia, peru, chile. high protein content (about 14%) compared to couscous and rice. good source of dietary fiber. high in calcium, magnesium and iron. gluten-free. excellent substitute of rice, pasta, potatos and couscous (which essentially is another form of wheat-based products).
