Few will ever figure out the calculus behind marrying stupendous with cheap, nevertheless Liao Fan Hawker Chan can lay legitimate claim to having done so. Helmed by Ipoh-born chef/owner Chan Hon Meng who formerly apprenticed at the now-defunct New Lam Thong Tea House, this Chinatown Complex Food Centre based stall opened in 2009 selling soya sauce themed oriental fare, of which most still remain priced under $4 today. A decade, 3 consecutive Michelin stars (2016-2018) and one Hersing Corp franchise partnership later, Hawker Chan has morphed into a full-blown culinary darling much adored by both locals as well as tourists.

Chicken rice was originally $2 before Michelin award, is now $2.80. Quality has also declined.

Actually, the additional customers after receiving the Michelin award were tourists, sometimes carrying their barang-barang.

For the old customers like myself, who frequented the stall before it got the award, we just went back for nostalgia.

Maria is actually the original grandmaster....hailing from New Nam Tong heritage. New Nam Tong was a Chinatown stalwart as old as Chinatown itself.
Their soy sauce chicken used to be known as Rose Chicken. Back then every afternoon queues would form to buy their freshly cooked rose chicken for $8 per bird.
Liao Fan himself learnt his trade in New Nam Tong.
Maria is owned by HK singer Maria Cordero who is daughter of one of New Nam Tong’s owners.
