Best Hawker Stall to run in a Hawker Centre

For the Sunday blues - If you are considering operating a Hawker stall what kind would operate and why. Also consider cost, profits, time and effort etc. Don't forget what appeals to the man on the street.

My preference is Fish Ball Noodles. Ready made ingredients including fish balls, short preparation for each order, after work cleaning is not as bad as say Char Kway Teow. Much of the preparation is done at the start of the day such as Soup stock, chillies, etc.

For creativity will run Noodle Special where try a particular Ramen for variety.
 
fish ball noodles in peasant food,the very minimum u need nowadays is mee pok or zhi char store.u have to prove u have culinary skills and able to whip up the best stir fried dishes like gong bao chicken or hor fun.
 
Seing drinks bestest. No skills involved and long expiry date for your products.
 
Sell fruit juice.. but get SYTs wearing bikini to sell them. One cup $4.... Size instead of S, M, L.. go by C, D, E... you get the drift.. :p

Source for the best fishball, make sure the dipping sauce is a killer and also source for noodles for certain texture. Mee Pok agree, need special skills, secret recipe.

Those western is getting very popular.

overrated and expensive....people will fall for it once and not again,hard to get repeat customers.
 
Hot drink must have standard especially the tarik. Thats why you see the Bayee run drink stall always got more business than the Chinese drink stall. Tu supplement they have sugar cane which is bloody hard work and messy.

Nasi lemak is what I prefer to do. Can prepare at home easily and no need to stand in front of hot stove to cook the dishes. Just make sure your chili is super standard and you sure to be okay.
 
Actually you got a great idea. There is no law or restriction for stall asst to wear bikini top and mini skirt to sell food. The fruit juice is also easy and good money. With out hot climate, I reckon that we have not maximised its value yet. Can get school girls on part time basis and on shift. They will appreciate the pocket money. Housewives will only complain if its PRC who are after their husbands.

Yes, indeed. The cheapest frozen chicken, all parts is said to come from Brazil. Because of the current freezing technology, the quality is still there.

I have found that chicken is the most lucrative dish.
 
This reminds of Charlie's at Changi Hawkers Centre. Had a great run. Cross between pub and hawker stall.

most fruit juice stalls are manned by lao uncle with face like Goh meng seng who looks like they cant even hold a job outside valet parking at mandarin oriental,i suspect business margin is not that good they wouldnt be able to afford additional manpower like PRC SYT from secondary schools to peddle their goods on that margin.....very cost intensive and only applicable to establishments who have other income revenues like restaurants or casinos.
 
I initially thought about Nasi Lemak as it is popular dish and you can start small and add on. Its the chill that stumped me. That is also another secret recipe. And you have do it yourself or else your asst will,open his own stall.
