The head count (10 or 12 or 32) refers to the number of abalones that make up a kati or 600gm. The smaller the abalone, the younger it is and as it takes years and years to grow to a large size..the standard is that the bigger and older, the better the taste
if they say 双头鲍, it means 2 abalones make up 一斤
compared to a 四头鲍, which needs 4 to make 一斤,
双头鲍 is better, becuz it's heavier and bigger.

The easiest way is just look at bottom of can. 140g is considered quite heavy. Small alabone can has 80-100 g marking. I think calmex ones r better cos got black rim.
Try to preheat the can for 6 HR first before cookingI prefer those small braised abalone. Easy to prepare and easy to eat!
