Mr Johnny Tan, owner of Grouper King restaurant. Mr Tan said that the most coveted portions of the giant fish like the liver, stomach, throat and skin can be sold for as high as $200 per kg.
The big grouper is known as a "Gao Tun". On the contrary, the fish meat is excellent. Its texture is succulent, bouncy & soft. Dont believe in old wives tales that big fish means flesh is not nice. Certain big fish, eg jewfish, taste very nice. In fact, the bigger they rae, the better the flesh!

Not surprised at all.. Horsburgh waters have many big fishes due to its deep waters.. Its common to see big Rays, Garoupas, GTs weighing more than 50 kgs and above being hauled up by anglers and fishermen in that waters.. When I was on a job trip there few years ago, a crew member managed to hooked up a 40 kg Garoupa to vessel..
This guy was in the papers, news and radio for almost the whole year, 3 years back? The Chinese papers wrote crap in the the price analysis which made him look like a philanthropist rather than businessman. Does anyone know why MSM wants to make him famous?
Maybe he gave many PAP MPs free Garoupa meals at his restaurant? :p
