108 years and no Michelin Star sure close shop lo

“I may be labelled as stubborn because of my insistence on using only handmade and hand sliced methods to handle all my beef and side dishes, therefore, the labor intensive problems hit us the most when the government keeps revising the policy on hiring foreigners," she wrote.

End of the day, sinkie destroy sinkie 108 year business. Not her fault but xenophobic sinkies.

That's like saying hey I had a choice to keep the business alive, but due to my stubbornness, I rather let the business die!

Wow... glad I didn't have an asshole daughter to pass my business down to.

I don't see ramen shops suffering from similar problems. If they can sell their noodles for $20 a bowl, why can't this 108 year-old business?

Please don't confuse high SES nihon ryori with low SES fodder designed to keep the 66% just alive enough to pay taxes and vote PAP.

Nihonjin take pride in their traditional cuisine, they are not gian png nor will they cut corners. Want to gian png might as well eat instant cup noodles or buy microwave-ready meals from 7-Eleven.

A lot of those ramen joints are by chefs: master to apprentice, or father to son, for generations. Not like this wannabe crap by Breadtalk Group's George Quek.

The issue is she Insists on running the biz the old fashion way. Tat why she close up. Nothing wrong with mechanisation...

The Hock Lam beef noodles clearly don't see their food as low SES fodder food. Yet they can't sell their bowl of noodles for $20 a bowl, unlike most ramen shops. The bitch should rebrand her beef noodles as a jap noodle stall specializing in beef noodles. That would save the 108 year-old business.

sinkie tolerance for comfort food threshold is $6.9 including drink. once the tab goes over that per person, biz will suffer unless food is sold as angmoh atas fare over $16.9 for a piatti of pasta in a posh looking eatery with angmoh ambience. anything in between or the foodie twilight zone will die an inglorious death. this auntie doesn’t know where she wants to be. neither here nor there. sure close shop. nothing to do with work process or labor. these can easily be solved in sg with ample cheap labor. the worst cost in sg is rent.
