Today, I bought about 700 gm of Australian fresh beef from the market.

When I grill it over high heat, placing the beef on the oven tray, it produces 1 cm deep of liquid in my 12 by 9 inches tray! I suspect they sold me frozen beef instead of fresh beef which they claim.

Or how can I tell whether the meat is fresh or frozen before or after cooking?
 
No, I only rub some butter on the tray and places small pieces on top. No sauce.

press the meat, and if it's hard, it's frozen. duh.

let the meat sit at room temperature for a while before grilling. in sinkapoor's hot and humid condition, let it sit at the bottom of the fridge (set on low) for a while before grilling.

and you need to grill on a grill, allowing the juices to flow away, not on a pan or tray which will soak your meat. double duh.

If you want FRESH beef, you have to kill a cow and have the meat cooked within 24 hours or else, the rot is going to get to you no matter how you try to cook it.

Yes, read a report somewhere in China the pig farmer they inject water before selling them.

With the scum overflowing almost every corner of our little red dot, we have to be little bit more :rolleyes:cautious. And since steak can be eaten medium, I like to be extra carefull. Don't want to end up eating medium beef which have been frozen for 3 months or more.

they put the meat in a huge washing machine, add water and add some thing that help it to absorb more water, to increase the weight of the meat.

it is a common practise around the industrial world.

conspiracy theories will not help you overcome your incompetency in "grilling" beef.

never "grill" beef on a tray. that's not grilling. that's baking. naturally, all the juices will stay on the tray. grilling means there are slots in the grill for the juices to flow through.

i face the same glaringly fob morons here in the bay area every weekend. they try to live the angmo life by doing their own backyard bbq (without learning how to do it) and end up chewing beef jerky on a nice sunday afternoon.

they could have asked me to help teach them about cuts and meat handling before they fire up their newly purchased stainless steel grill. when things go wrong, they blame it on the meat.

I wash it, i dry it and i grill it, not liquid but something like blood flowing out. i think thats call fresh.
