Dinner at a local "farmer's" restaurant
In China very ofter one gets worried after seeing the kitchen due to hygiene and cleanliness and also after seeing dogs and snakes and wild birds in cages ready to be slaughtered. Chinese understands foreigners don't eat these things however do inform them before hand.

No idea what this fish is - was told its big head fish 大头鱼, looks very much like Thailand's snakehead
