KNN, no wonder my chap chye png sweet sour pork taste funny nowadays Also those ahtiong run steamboat bbq at geylang and beach rd, all their meat usually heavily season and spiced to cover any funny taste. Cheebye ah tiong trying to kill us so they can take over this little red dot..AVOID!!!!!

Small eateries serve expired meat
Many small eateries drown expired meat in heavy sauces to mask any offensive taste.
Singapore, December 7, 2009 - It's an open secret that those who cook honestly know - like professional cooks and housewives who preen over their stove daily.
But most diners would just pop the wanton stuffed with expired pork into the mouth without complaining as long as it tastes fine. Or the crispy sweet sour pork which is as tasty as a dried jerky with no natural savoury juice.
Many small eateries are apparently guilty of using expired meat to save costs, reported Shin Min today.
To make their food as palatable as possible, they try to drown any offensive flavour or smell of the meat in heavy sauces.
Tung Lok group executive chef Sam Leong said most restaurants would not take such a risk to serve bad meat because the difference in taste is obvious even when it's smothered with heavy sauces.
However, restaurant chefs here said they would still use meat that's stored for two or three days. But they would quickly marinate it before it goes bad.
Meat preservative is one of the items that they could use.
Netizens in online forums have also expressed concern about seafood restaurants cooking fish that has been dead for one or two days instead of fresh or live one. They would braise the expired fish in thick dark sauce, fry or deep-fry it and then cover it with a sauce.
Shin Min reported that the NEA welcomed public feedback on such practices as it would take action against errant eateries.
Earlier this year, a frozen meat customer complained to the authorities that one company allegedly sold expired meat.
A few months ago, Jakarta was hit by a food scam which saw scavengers picking rotten meat from rubbish dumps and repackaging it for sale at bargain prices. Police raided a processing centre, confiscating tens of kilos of rotten meat.
How to tell if the meat has expired
1) Its texture becomes dry
2) It has no natural sweet taste
3) It has no savoury or sweet juices.
Once you have eaten fresh meat, you can tell the difference easily. It has the delectable Umami flavour and fresh sweetness.
From meat to tap water
Another practice of many small eateries is serving tap water to save costs instead of boiled water, reported Shin Min. Many western eateries are guilty of this.
But chefs and the authorities said there was no need to boil water as Singapore's tap water is clean and safe for drinking.
