There is also the Leidenfrost effect where you don't need to burn any oil to start with. I prefer this because I don't get all that smoke in my kitchen and I don't waste any oil. Heat your pan until it's hot enough that when you pour a bit of water into it it forms a ball that rolls around the pan as if it's sliding around on ice (not a bunch of bubbles that spatter and shoot around). Then, let your pan cool down to the temperature you need it and it will be non stick.
