Charles Mora, 30, was accused of butchering the mollusc while Michael Bossert, 52, allegedly slammed the fish against the gunwale off the coast of the Florida Keys.
The pair were rumbled by an activist who passed video of the attacks to People for the Ethical Treatment of Animals.
They were charged with third-degree felony animal cruelty following the stone-crabbing trip.

The video later cuts to an octopus being lifted up before having its head ripped off and its body chucked on the floor.
Its eight tentacles continues to writhe around across the wet surface despite its head being overboard.
And a third part of the clip showed what appeared to be a lobster being severed in half by hand while it was still alive during the November 19 trip onboard Booga Man.
The pair were tricked by activist Kerin Rosen, who told them she had an interest in commercial fishing and asked to join them.
FWC investigator Christopher Mattson affidavit wrote in his report Mora grabbed the octopus while using 'a violent ripping motion and removed the head and guts'.
He added: 'Mr. Mora went about his way and continue to work. He does not pay any attention to the octopus squirming and struggling while suffering in the bin.'

She said: 'The crew welcomed the individual aboard, where she openly recorded workers mutilating crabs and octopuses and beating a shark against the side of the boat.'
But Rosen was a former PETA activist who took a hidden camera into a horse stable in Kentucky in 2015 to try to prove the use of electroshock devices.
Bossert handed himself into cops in Bonifay, Holmes County, last month while Mora was arrested on June 1 after the video was circulated in April.
The latter was booked into Monroe County jail on a $10,000 bond on June 1, which was met. He is next due in Monroe Circuit Court on June 20.
The move is a rare case where Florida Fish and Wildlife Conservation Commission to launched felony charges against commercial anglers.
