Lamb bak kut teh is an abomination. As ridiculous as conjuring up pork bolognese.
The Hokkiens generally can't cook, but bak kut teh is one of their few great concoctions. Don't tamper with it. The herbal KL/Klang version trumps the peppery Singaporean version every time.
