WORKSHOPS on gourmet creations of local favourites will begin at Lau Pa Sat Festival Market when it kicks off next Saturday.

The Lau Pa Sat Series, a collaboration between the famed food centre, People's Association (PA) and Kopitiam Group, will feature eight culinary workshops on Teochew, Cantonese, Hakka, Hainanese and Eurasian cuisines.

It will also feature a wine gourmet matching workshop at which participants learn how to match the right wine to the popular hawker dish.

The series will start with award-winning chef Eric Teo on May 16, with his 'Traditional Hokkien Delights' workshop.

Mr Teo, who is the executive chef of Mandarin Oriental Singapore and awarded best executive chef at the World Gourmet Summit in 2006 and 2008, will share his recipes for three Hokkien dishes- claypot noodles, hae chor (prawn rolls) and tau suan (dessert).

These workshops at Lau Pa Sat, which is held every month, is part of PA's Singapore Culinary Journey 2009 programme which is running from May to December.

The programme aims to showcase Singapore's dishes and highlights the talent of chefs here who constantly push the envelope when recreating traditional dishes for modern tastes.

It will feature a total of 27 culinary workshops and 26 beverage workshops featuring specialty wines from different countries, beer, whiskies, gourmet coffee, tea and health beverages.

Other guest chefs participating in the Lau Pau Sat series include Mr Sam Leong, director of kitchens in Tung Lok restaurants, Mr Abdul Biji Kadir for Malay cuisine and Mr Miland Sovani for Indian cuisine.

The workshops cost about $10 for PAssion Card members and $15 for the general public.
