Famous restaurant, disappointing service

WE WENT to Long Beach East Coast restaurant last Saturday evening, expecting to enjoy a seafood dinner with family. It was just four of us - husband, wife and two children.
While the restaurant seemed quite full, there were a few tables available and we got one on the beachfront. We ordered our food, just three or four items, and waited for it to arrive. The waitress also advised us a few selections.
After more than half an hour of waiting, we checked on our order with one of the waiters (all seemed to be flitting from one table to another but sometimes not doing much). After 10 more minutes and a couple of staff asking us again if we had ordered, a different employee came and said our waitress had forgotten to key in our order.
By this time we had waited for more than an hour since we placed order. This waiting time at one of Singapore's best- known seafood restaurants was unacceptable by any measure of customer service standards. Not only did the staff not follow up on a table waiting for more than an hour, but there was no apology to us nor any effort to speed up the order. My husband went up to our waitress (who had stayed away from our table all this while) and she did not do much other than repeat what others had said before.
There was no sign of the restaurant manager. We finally left without any food from the restaurant.
What is the point of being famous for good seafood when there is no effort to serve the customers well?
