For me, it's not the food or the cuisine, but the cook. He/she is the one that makes the difference between a serving of slop, or a delicious meal. For example, a homemade omellete when made with the heart, added with chopped onions, tomatoes, ham, mushrooms, drizzled with some seasoning, spices, tobasco sauce, can be just as enticing as an expensive gourmet meal from a ritzy five-star restaurant.
