can anyone help me understand why the indian briyani hawker does this?

he scoops a portion of basmati rice, then put the mutton and curry on the rice, then scoops another portion of basmati rice to cover up and bury the mutton and gravy.

why does he do that? any consequential change to the briyani by doing that?

or it's simply a waste of time?

yeah lah...........i think is to keep the meat from cooling off and drying out................plus the rice on top can absorb the fragrance and taste

i have another question. it's about rotiprata.

i always find it strange that from the round lump of raw dough, he flips and flips the raw plata to big big square, then he folds the sides nicely into a smaller square , then he niam niam it back into a round lump again.

Then he flattens the lump into a sort of square before throwing into the big pan to cook.

Then what's the purpose of flipping the first place?

Shouldn't it be after flipping and folding, straightaway throw into the pan? Why he niam niam back into a lump again??? Strange plata man...
