I like the duck rice and kway teow as well as the satay at Newton, but both are more expensive than at my favourite hawker centre at Bukit Timah.

Newton Circus and Lau Pa Sat have always been tourist traps, with the latter also catering to the CBD officer worker lunch crowd.

Maxwell only changed in recent years.
 
Maxwell hawker centre has turned into a tourist trap zone, too many tourists crossed the road from the Chinatown area to makan there. My guess is travel guides or tour guides brought them there.

A chunk of KFC business has been taken away by Jollibee.
There are at least half dozen chicken rice stalls in Maxwell all wanting to scam tourists

The duck rice come in more generous servings for the price at Newton and Bukit Timah Hawker Centre vs that scammer Ah Heng Duck Rice at Hong Lim Food Centre.
